Directions
In 5-quart saucepot, bring milk and chicken broth just to the boiling point over medium-low heat. With wire whisk, stir in Shedd's Country Crock™ Side Dishes Homestyle Mashed Potatoes and cheese until smooth. Stir in corn and shrimp. Cook, stirring occasionally, 3 minutes or until heated through. Do not boil. Sprinkle with green onion and bacon and season, if desired, with salt and ground black pepper.
* Variations:
For Cheddar Potato Corn Chowder with Sausage, substitute diced cooked sausage for shrimp and 1 cup frozen green peas, thawed, for corn.
For Cheddar Potato Corn Chowder with Clams, substitute 2 cans (8 oz. ea.) clams, drained (reserve 1/2 cup liquid), for shrimp, decrease milk to 1-1/2 cups and add reserved clam liquid.
